Spinach & Lentil Hummus Wraps

Ingredients

For The Wraps

  • 6 Large Spinach leaves
  • Carrots, cucumber, Beetroot
  • Hot Sauce
  • Lettuce
  • Purple cabbage

Instructions

For the Hummus

  • Place all of hummus ingredients into a jug and blend until smooth. Make sure it is quite thick so that it will stay in your spinach wrap.

To Make your wraps

  • Bring a pot of water to a simmer, then cut off the spinach sticks and place the leaves in the water one by one for about 1 minutes to soften a little. Take them out with tongs and place on some kitchen towel to drain.
  • Peel and slice all your veg into thin strips and set aside.
  • Then lay your spinach leaves out and smear with hummus, add in your veg and a little hot sauce and roll up. You can use some of the hummus to stick it together. Then slice and place in your lunch box to take with you.
