This hearty vegetable stew is exactly what a cold weekend needs. Full of flavour, warms you right up!
Serves: 2 people
Prep Time: 15 minutes
Cook Time: 35 minutes

Ingredients

  • 1 Onion Chopped
  • 1 tsp Olive Oil
  • 1 tsp Garlic Crushed
  • 250 g Portabello Mushrooms sliced
  • 1 tsp Mixed Herbs
  • 1 tsp Dried rosemary
  • 2 1/4 Cup Vegetable stock
  • 1/2 Cup Red Wine Optional but recommended
  • 400g tin Chopped Tomatoes
  • 2 Carrots [Large] Peeled & chopped
  • 2 Celery Sticks Peeled & chopped
  • 2 Medium Poatatoes Peeled & chopped
  • 1 tbsp Tomato Paste
  • 1 Cup Fresh garden peas Frozen can also be used
  • 2 Slices Artisan/ wholewheat toast
  • Salt & Pepper to Taste

Instructions

  • Place a large pot over a medium heat and all the olive oil and once hot, add the onions. Cook until soft and translucent.
  • Add the garlic and cook for a further 5 minutes.
  • Pour in ½ cup of the vegetable stock and allow to simmer before adding the mushrooms.
  • Allow the mushrooms to cook in their own juices for 5 minutes and add the mixed herbs, rosemary and season with salt and pepper.
  • Add the red wine and allow cook for a further 5 minutes.
  • Now, add in the 2 cups of stock, tinned tomatoes and tomato paste along with the chopped carrots, celery, and potatoes.
  • Bring to the boil and reduce to a simmer for 25 minutes or until the potatoes are soft
  • Add the peas in the last 5 minutes and place the bread in the toaster.
    Once the toast is ready, smother with butter and serve your stew hot!
