The perfect ‘Happy Place’ type of meal. That is fabulous to prep ahead of time, take to a braai or just for you and the family for lunch or dinner.

Ingredients List

Serves 6-8

  • 1kg potatoes, peeled and thinly sliced
  • 1 onion, diced
  • 2 tbsp thyme
  • 1 cup vegetable stock or coconut milk
  • 2 tbsp garlic, crushed
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • ½ cup vegan cheese, grated [Have you tried Nutritional yeast for extra flavour?]
  • Fresh thyme for garnish
  • Cooking spray

Method

Preheat oven to 180°C and prepare a baking dish with cooking spray. Place half of the potatoes at the base of the dish and add in half garlic and thyme. Fill the dish with the rest of the sliced potatoes standing up and finish the garlic and thyme. Pour over coconut milk and top with grated cheese. Cover well with foil and bake in the oven for 60 minutes or until golden brown. Top with fresh thyme and serve immediately.

**coconut milk and vegan cheese can be substituted for dairy.
