This recipe is one that I absolutely love. It’s vegan and easy to make but obviously if you want to substitute with normal butter then its just as tasty too. “You do you boo”

I also believe having apple pies during a festive season – what ever that may be – is a must. So give this delicious Vegan Apple Pie a go and tell us what you think?

SERVES: 3                        PREP TIME: 10 MIN             COOKING TIME: 30 MIN

INGREDIENTS:

 

INSTRUCTIONS FOR PIE FILLING:

  1. Dice your apples into small pieces.
  2. In a sauce pan, mix water, 2 tsp castor sugar, lemon , cinnamon and cornstarch. Bring to boil until the mixture thickens.
  3. Remove sauce from heat.
  4. Toss your diced apples into the thick sauce, mix them in until they are well coated.
  5. Let the apple mixture cool for 5 minutes.

 

 

INSTRUCTIONS FOR DOUGH:

  1. Preheat the oven to 180 degrees Celsius.
  2. In a large bowl, combine the flour, sugar and salt. Add the cubed butter and mix into the flour until crumbly. Gradually add water to the flour and knead the flour until a dough is formed.
  3. Flatten the dough with a roller ball.
  4. Cut out circles from the rolled-out dough. (2 circle doughs will make one mini pie)
  5. Put one heaped spoon of the apple filling onto the center of one cut dough. Lightly brush the edges of the dough with water so that it will seal properly.
  6. Put the other half of the cut dough on top of the filling and seal the pie.
  7. Continue the process with the rest of the pies.
  8. Brush the top of each pie with plant-based milk and sprinkle some brown sugar over it.
  9. Bake for 20 – 25 minutes until golden brown.
  10. Enjoy!
