School is in full swing and the kiddo’s are settled [well mostly] and now also doing some extra murals which is a new and exciting thing for mine but also needs them to have some extra snacks and more energy for sports. So the Lunchbox Chronicles are back to help us out with the most delicious Savoury Spinach and chickpea Muffins that your little ones will absolutely love!

Muffins are super easy to make ahead of time and keep all week. They almost get better with time in a Tuppaware – Am I right? Or am I weird? We love prepping muffins together on a Sunday and then I have lunch box treats or post school snacks without the fuss. Definitely finding the time to prep is key to keeping these little humans happy and healthy. When rushed and unprepared I often find ill find something quick and easy to grab which generally means bad for them [Or not the best…]

Savoury spinach and chickpea muffins

Delicous and healthy Savoury spinach and chickpea muffins that are the perfect addition for the lunch box school repitoire

Lunch Box Fillers


  • Heat the oven to 180C and grease a muffin tin.
  • Sift the flour, baking powder, paprika and salt together in a large bowl.
  • In another bowl whisk the flax eggs, milk and oil together until smooth. 
  • Slowly pour the milk mix into the flour mix and whisk until well combined. The mix will be quite thick.
  • Gently stir in the spinach and chickpeas.
  • Fill the greased muffin tins to h3/4 full and place in the oven to bake for 20 minutes or until cooked through.
  • Allow to sit for 10 minutes, then gently remove the muffins and allow them to cool on a cooling rack.
