I love including my kids in healthy, fresh recipes and at the same time I hate wasting half a banana or pear or apple and usually end up making them a fruit pie with their left overs [Shhh don’t tell them]. So this for me is another fantastic way of not wasting perfectly good fruit that may have satisfied them for half the apple 🙂

So this Ice Lolly recipe is quick and easy and they love that they made them, and I love that we wasted nothing. I also make them for when al my friends with kiddies come over and that way kids treats are sorted, healthy and delish and often the adults just love them too. So its really a win win anyway!

Rainbow Fruit Lollies

  • 1 large banana
  • 1 punnet strawberries, hulled
  • 150g dried mango
  • 180g blueberries

In a blender, blend ½ the banana with the mango until smooth and pour into the lolly mould. Rinse the blender and add the other ½ of the banana with the strawberries and blend. Carefully pour or spoon the strawberry and layer into the moulds. Rinse the blender and add the blueberries, blend until smooth and top up the lolly mould. Carefully insert the ice-lolly sticks and freeze for 8 hours or overnight. Once set, rinse under warm water and gently remove. Sprinkle with desiccated coconut and enjoy a day out by the pool.
