Description

Black eyed beans have a soft texture when cooked and a creamy flavour that takes on the tastes of spices & sauces beautifully. These versatile black eye beans are gluten-free, non-GMO and have no additives or preservatives.  They are also:

  • Packed with nutrients: particularly vitamin A (promotes skin and eye health) and folate (great for pre-natal health and producing red blood cells), as well as potassium, calcium, magnesium and iron
  • High in soluble fibre which enhances digestion, heart health, provides sustainable stable energy and reduces bad cholesterol
  • A source of protein for vegetarians and vegans

 

Preparation:

  • 1 part beans to 3 parts water
  • Soak beans in hot water overnight
  • Rinse, add another 3 parts of water and bring to the boil
  • Simmer covered for about 60 minutes

Along with its traditional use, use these beans in stews, rice mixes, or in bean-hummus / dip variations.
