For those of you following a Plant Paradox diet this bread recipe is right up your alley.

Double Recipe – Because things are always better in pairs 🙂

Ingredients

  • 10 Eggs
  • 2 Cups Sorghum Flour
  • 2 Cups Coconut Flour
  • 2 tsp Salt
  • 1 tsp Xanthum Gum
  • 1 Cup Olive oil / Coconut Oil
  • 1 Cup Psyllium Husk
  • 1 Banana [This is optional]
  • 2 TBS Honey to taste
  • 1 Packet Yeast

Add – ons:

Now I love to spice things up so some ideas to add are:

  • Garlic and cut up olive pieces
  • Blanched and flaked almonds
  • Cranberries

Method

Set the oven to 180 degrees, fan bake.

Add the eggs to the bowl and follow by adding all the wet ingredients.

Slowly add the dry ingredients until combined. It needs to be just past sticky, if not then a few more spoons of your choice of oil.

Cover with a damp cloth and allow it to rise. Roughly 30 minutes.

In a lined bread pan [Not wax paper] add the mix to the pan and place in the centre of the oven – middle tray and bake for +/- 30-40 minutes.

Allow to cool, slice and enjoy.
