Lockdown is a wonderful way to force you to do a little reorganising, or spring clean or even some menu planning.

We also know there was some panic buying pre shut down and I’m sure you bought things you already had in your pantry in the fear you might not have … so we have decided to go through your pantries and try make up some recipes with what you have already.

Remember … Zero Waste living doesn’t need to be put on hold just because of the apocalypse now does it 🙂

So What’s in the Pantry?

We had a look in mine briefly and found a lonesome tin of creamed sweet corn. To be honest there is a chance it has been there quite some time – saving it for a rainy day… or well… a World Wide Lockdown. 

When going through my recipe book from friends and family I found my sister-In-Law from New Zealand [Super mom of 3 gorgeous girls who cooks from scratch with just about everything] recipe for Sweet Corn Fritters. My kids love it, Dom loves it and it’s generally super quick to whip up – Only two steps [woop woop] and you can tart it up for adults too.

So here you are,

Hatties Sweet Corn Fritters Recipe:

Ingredients:

1 Egg [Beaten]

1tsp Sugar

1tsp Salt

2tsp Baking powder

1TBs Melted butter

1 Cup Flour [I used cake wheat but you can replace with one of your choosing or one thats in the pantry]

1 Cup milk

1 Tin creamed Sweet corn OR tin of corn kernels or 1 Cup of frozen corn [Or even a mix of both if thats all you have]

1Tbs mixed herbs [fresh basil is also fabulous]

1tsp Paprika

1 Chopped chilli / dry chilli flakes [for the adults not the kids, but you can always cook up the kids first then add the chilli and fry up the rest]

Garnishing – Tart it up with your faves. We love to stack them with baby spinach and extra mature cheddar. Crispy bacon, avo and ‘cremzola’ cheese also make for a great combo!

Method:

Add all the ingredients together.

Add corn last. [Told you it was simple]

 

Add oil of your choice to a frying pan on medium heat and pop a dollop of the batter into the pan. Let it simmer until your able to flip it without breaking. A steady low/medium heat works perfectly – just have some patience.

remove from heat when golden brown on both sides, top with cheese, stack as you like and Voila! Lunch for the whole family sorted.

 

BONUS: Once cooked these fritter freeze nicely too. So pop them into a container and your good to go for another day when time isn’t on your side.
