Wanted to make something cute, tasty and Easter themed but ran out of time?

You’re not alone there, but not to worry as we have you covered with the most basic recipe with huge ‘cuteness’ factor and brownie points with the kids too.

All you will need is:

2 Cups of coconut [Whatever kind you have in your pantry is fine, a rough cut looks better but I used desiccated and it looked gorgeous too.]

1 Cup chocolate chips/bark [I used a mix of both]

Speckled eggs, or easter eggs, or even a mini chicken or bunny 😉

Thats all…seriously!

Method:

Place your coconut on a sheet of baking paper and pop in the oven for 2-5 minutes.

Do not walk away – I burnt mine twice before getting it right. It only requires slightly browning up

Melt your chocolate in a bowl, i did a few 30 second intervals in the microwave.

Add the two together. If the mixture is too wet or runny add a handful more of coconut.

Place that same sheet of baking paper [no need to waste] on a flat plate or tray and scoop out a small spoonful spacing them out a about 2cm apart.

Using the back end of the spoon make a small well so it looks “nest like” and then place your speckled eggs, easter eggs, or little animal in the middle and VOILA!

Place them in the fridge to set and your all good to go.
