CREAMY PUMPKIN TAGLIATELLE

After weeks of indulging in sweet festive foods, a new year absolutely needs something that will melt away all the sugar accumulated in the body. I created this meal because I wanted something satisfying and delicious for a new year, something fresh and that boosts digestion to help detoxify the body and enhance rejuvenation. That is where the creamy pumpkin soup comes into playūüėä as it aids in weight loss and is packed with antioxidants.

COOKING TIME: 30 minutes        PREP TIME: 10 minutes          SERVES:2

INGREDIENTS:

  • 150 grams tagliatelle
  • 300 grams pumpkin
  • 125 ml cream
  • 1 tbsp garlic powder
  • 1 tbsp butter
  • 5 liters water
  • 1 tsp salt
  • 1 carrot
  • 30 grams feta cheese

METHOD:

In a pot, boil the pumpkin in 800 ml of water. After pumpkin is cooked, drain the excess water.

Boil 1.7 liters of water in a pot and add a pinch of salt.

Put the Tagliatelle pasta in the boiling water and stir for 10-15 minutes.

To create the pumpkin sauce:

In a sauce pan, pour the cream, garlic powder, and butter then bring to slight boil over medium heat.

In a food processor, blend the pumpkin and cream until creamy and thick.

Pour the sauce over the pasta and sprinkle fresh carrots and feta cheese. Enjoy!
