After weeks of indulging in sweet festive foods, a new year absolutely needs something that will melt away all the sugar accumulated in the body. I created this meal because I wanted something satisfying and delicious for a new year, something fresh and that boosts digestion to help detoxify the body and enhance rejuvenation. That is where the creamy pumpkin soup comes into play😊 as it aids in weight loss and is packed with antioxidants.
COOKING TIME: 30 minutes PREP TIME: 10 minutes SERVES:2
- 150 grams tagliatelle
- 300 grams pumpkin
- 125 ml cream
- 1 tbsp garlic powder
- 1 tbsp butter
- 5 liters water
- 1 tsp salt
- 1 carrot
- 30 grams feta cheese
In a pot, boil the pumpkin in 800 ml of water. After pumpkin is cooked, drain the excess water.
Boil 1.7 liters of water in a pot and add a pinch of salt.
Put the Tagliatelle pasta in the boiling water and stir for 10-15 minutes.
To create the pumpkin sauce:
In a sauce pan, pour the cream, garlic powder, and butter then bring to slight boil over medium heat.
In a food processor, blend the pumpkin and cream until creamy and thick.
Pour the sauce over the pasta and sprinkle fresh carrots and feta cheese. Enjoy!
