I absolutely love date balls and think to have a small container of them in the fridge / freezer at all times is such a win for all cravings or when the energy levels drop. I also love to add them to my kids school lunches to keep it healthy but for them its such a treat. Plus an easy way to sneak in some extra fruits and superfoods if you need.

This Coconut, Ginger & Pineapple date Ball recipe is such a unique take on them and the pineapple and ginger add some ‘zing‘ that I simply crave.

  • Add all ingredients to a food processor or blender.
  • Blend or pulse until the ingredients come together in a “dough” ball.
  • Divide into portions (about 1 tbsp per portion), roll into small balls and then roll in
    some coconut.
  • Store in an airtight container in the fridge.
