Carrot Ginger Muffins

One of our regular customers and fabulous mom who is dedicated to giving only the best to her son with no sugars and an as Organic as possible diet for her and her family made these amazing muffins and we couldn’t help but share them.

They are just the right amount of sweetness and fluffiness. If you want to make them fully vegan then add maple syrup instead of honey or any other sweetener of your choice.

Ingredients:

200g – Spelt Flour

1/2tsp – Baking Soda

1 tsp – Baking Powder

100g – Ground almonds

200g – Grated carrots

300ml Almonds Milk [Or try make your own see recipe here]

50g – Coconut Oil

2 TBS – Raw Honey [Adjust according to taste]

1 tsp – Grated fresh ginger [Adjust accordingly]

Method:

In a small pan melt the coconut oil on a very low heat and add the almond milk and honey.

Mix well until dissolved, but do not over heat – just to warm it further.

Pour wet ingredients into dry ingredients and mix until combined. Add the carrots and pour mixture into muffin moulds

Bake for 20-25 minutes at 180Degrees C.

They will be done when a stick comes out clean. Leave to cool completely.

They only get better and better!
