I created this recipe for parents who do not have an idea of what to pack for their kids’ lunch. This recipe is easy and will make anyone want to work hard to reward themselves with a hearty lunch such as the biltong quiche or cupcakes. This is simply delicious!
DIFFICULTY: Easy PREP TIME: 40 minutes Serves: 3
- 350 ml cake wheat flour
- 300 grams grated gouda cheese
- 1 tsp pepper
- 1 tsp salt
- 5 eggs
- 20 ml canola oil
- 200 grams plain yoghurt
- 1 heaped tbsp mayonnaise
- 150 grams sliced biltong
- 300 grams mushroom
To make the crust, in a bowl pour flour, 125 grams cheese, pepper, salt and 2 eggs. Mix well and flatten the dough with a rolling pin.
Press the dough in a tart pan and refrigerate for 15 minutes.
On the stove, sauté the mushrooms for 5 minutes.
In a bowl, whisk 3 eggs, add 125 grams cheese, yoghurt, mayonnaise, biltong and mushroom together.
Pour the mixture in the tart pan and bake for 20 minutes at 200 degrees Celsius.
Cool for 5 minutes and enjoy with coriander and extra sliced biltong.
